Nut ‘n’ Honey Balls

Yield: 10 to 12 balls

Honey—if unfiltered, unheated, and raw—is a solid choice for a natural sweetener. It contains amylase, so it aids carbohydrate digestion. The honey will work on digesting starches if you allow it to work on the foods it is mixed with for 15 minutes or so before eating it (as with oatmeal). A good snack for you, this can be a terrific special occasion treat for your baby over one year.

Stir together the nut butter, seeds or nuts, and honey. Mix well.

Roll the mixture into 1-inch (2.5 cm) balls. Roll the balls in the coconut.

Note:

The Nut ‘n’ Honey Balls keep well in the freezer and can easily be tossed in a lunch or for an on-the-go snack. For a variation, these can be formed into two inch by one inch (5 x 3 cm) bars. Wrap them up in parchment paper and toddlers over 18 months will love these healthy ‘candy bars’. Use a cup of the Chopped Nut and Flax Mix in place of the Sprouted Seeds or Nuts and it makes these quick to prepare.
